Creamy Udon Carbonara
Inspired by Guu Sakabar’s Udon Carbonara.
- 2½ lbs udon noodles
- ½ cup heavy cream
- 6 eggs
- ½ lb bacon, cut into ½-inch dices
- dozen mushrooms
- 2 small onions
- 2 tsp extra virgin olive oil
- ½ cup freshly grated parmesan cheese
- 2 tbsp chopped Italian parsley
- Salt and freshly ground black pepper, to taste
- Chopped seaweed
- Optional raw egg on top
