Inspired by Guu Sakabar’s Udon Carbonara.

• 2½ lbs udon noodles
• ½ cup heavy cream
• 6 eggs
• ½ lb bacon, cut into ½-inch dices
• dozen mushrooms
• 2 small onions
• 2 tsp extra virgin olive oil
• ½ cup freshly grated parmesan cheese
• 2 tbsp chopped Italian parsley
• Salt and freshly ground black pepper, to taste
• Chopped seaweed
• Optional raw egg on top
